Ingredients
- 12 cloves
- 40 black peppercorns
- 20 grams rock salt
- 3 centimetres fresh ginger
- 4 cloves garlic
- 250 grams onion, quartered
- 200 grams apple, quartered. can leave seeds and core in.
- 1000 grams tomatoes, quartered
- 100 grams sugar
- 0.5 teaspoon ground allspice
- 140 grams while vinegar

Place cloves, peppercorns and salt into TM bowl. Chop for 8 seconds on speed 8.
Add ginger and garlic and chop for 3 seconds on speed 7.
Add onion, apples and tomato and chop for 4-8 seconds on speed 8.
Place all remaining ingredients in bowl. Cook for 55 minutes, varoma temperature, speed 1, reverse "Counter-clockwise operation" . Cook without MC and put basket on top of the lid to deflect the splashes. Pour into sterilised jars ans seal.
Tip
you can make this recipe as smooth or chunky as you like. If you want to use it more like a relish (for on sandwiches etc) then cook for longer to reduce it down to a thicker consistency.
Add chilli for a a bit of bite.

This sauce is my favourite. Perfect thickness as my tomato base for pizza and on snitzels for our parmas. This is the one I always have to have in the fridge. Thank you for the recipe.
