Ingredients

Peach and Ginger Jam

  • 1000 g peaches, (washed and stones removed)
  • 250 g Glace or crystallised ginger
  • 1 lemon, (peel and pitch removed)
  • 800 g sugar, (white sugar or raw sugar, milled)

Recipe's preparation

    A delicious treat for morning or afternoon tea, or a lovely gift for someone.
  1. 1.) If using Raw sugar, mill 5 seconds / Speed 9.  Then set aside.

     

     

  2. 2.) Place the ginger in the TM bowl and chop 6 seconds / Speed 6.

     

     

  3. 3.) Add the lemon and the peaches and puree for 10-15 seconds on speed 9.  You want a thick, soup like consistency.

     

     

  4. 4.) Add the sugar, and cook for 40 mins Counter-clockwise operation"Counter-clockwise operation" 100 degrees / Speed 2.  MC Removed and TM Basket placed on top of the lid to stop any splattering.

     

     

  5. 5.) Place a small plate or saucer in your freezer

     

  6. 6.) At the end of 40 minutes caefully remove the lid, and using the TM spatula, smear a small dollop of the jam on your frozen plate.  Wait a few seconds and then push along into the side of your dollop of jam.  If the jam 'wrinkles' slightly then it is set and ready to bottle.  If not you will need to cook for a further 5 minutes / Varoma / Counter-clockwise operation"Counter-clockwise operation" / Speed 2.  Repeat this Step until you get a good gel/set.

     

     

  7. 7.) Once you achieved a good jam like consistency. You can bottle the jam in clear glass jars using canning techniques such as these:

Tip

If you have difficulty with the jam setting try to add more sugar or pectin.  You can buy pectin in the cake/flour aisle of your supermarket.  Apples and lemons also have higher levels of natural pectin, so they are good additions to jam to assist with setting.
