Ingredients
Cream of Asparagus
- 1 onion, peeled & halved
- 1 clove garlic, peeled
- 2 bunches of fresh asparagus, trimmed and cut into 3 cm pieces, tips reserved, (about 240 grams)
- 200 g Sweet Potato, peeled & cubed
- 1 tbsp TM vegetable stock
- Salt& Pepper to taste
- 400 grams water
- 20 grams olive oil
- 10 grams chia seeds
Topping (optional)
- 20 grams blanched almonds, chopped

I'm cooking this todayRecipe's preparation
1. Place onion and garlic in Mixing bowl. chop 3 sec/speed 7. Scrape down sides of bowl.
2. Add olive oil. Saute 4 mns/120C/speed 1 (Varoma in TM31)
3. add asparagus (except for tips), sweet potato, stock and water. Cook 14 mns/100C/speed 1.5.
4. Check if sweet potato is cooked. add salt & pepper seasoning and chia seeds. Blend 1 mn/speed 9.
5. After blending add asparagus tips and serve adding almond topping (optional).

hi Anniemac123, yes as the asparagus tips are so delicate and tender, i just add them raw. They will be slightly 'cooked' in the hot soup, but still be firm and a little crunchy for texture. hope you like it
This recipe sounds lovely. I only don't understand the end part with the asparagus tips. Are they added raw to the soup?
I havent really cooked with asparagus much but when my veggie box came 2 weeks in a row with a bunch I decided to give this soup a try! wow it is very tasty, so easy to make, I doubled the portion of sweet potato as I love a thick soup. Very yummy , will make again Thank you for sharing
This recipe turns out beautifully! Ticks all the boxes - tasty, easy to make, healthy, fuss-free ingredients. I got about 4 x 200ml serves, so I'd make double if you're serving it as a main. Very balanced flavour, didn't even need any salt and pepper. Not as asparagus-y as your standard asparagus soup, which can be good for fussy eaters.
I was apprenhensive about blending the hot mix at speed 9, so I did it slower at lower speed and it turned out fine.
