- 185 grams Butter, cubed
- 1/2 teaspoon vanilla essence
- 1 plain flour, cup
- 1/2 white sugar, cup
- 1 Desiccated Coconut, cup
- 1 tablespoon cocoa
- 30 grams Butter
- 1 1/2 tablespoons hot water
- 1 icing sugar, cup
- 2 tablespoons cocoa
- Desiccated Coconut

BASE
1. Preheat oven to 180 degrees fan-forced.
2. Add cubed butter to TM bowl and melt for 1 minute at 50 degrees on speed 4.
3. Scrape down sides of TM bowl and melt for 2 minutes at 50 degrees on speed 4.
4. Add vanilla essence and mix for 10 seconds on stirring speed.
5. Scrape down sides of TM bowl and add dry ingredients and mix for 20 seconds on speed 2.
6. Press mixture into base of 28cm x 18cm tin covered with baking paper.
7. Bake in moderate oven (180 degrees) for 20 minutes.
8. Allow base to cool completely in tin.
9. When cold, ice with chocolate icing and sprinkle with coconut.
10. Cut into bars when icing has set.
1. Add hot water and butter to TM bowl. Melt for 30 seconds at 50 degrees on speed 4.
2. Scrape down sides of TM bowl and melt butter for a further 30 seconds at 50 degrees on speed 4.
3. Add sifted icing sugar and cocoa and mix for 1 minute on speed 4.
4. Scrape down sides of TM bowl and mix for a further 30 seconds on speed 4 or until icing is smooth and glossy.

Tip
* Add an extra tablespoon of hot water to the icing mixture to soften even further, if necessary.
* You can substitute cocoa for cacao.
* You can substitute the white sugar & icing sugar for milled raw sugar, rapadura sugar or coconut sugar.
