Ingredients

  • 450 grams Raw beetroot
  • 1-2 cloves garlic
  • 200 grams Greek yoghurt
  • 10 grams olive oil
  • 10 grams white wine vinegar or apple cider vinegar
  • 1-2 level teaspoons cumin
  • 30 grams tahini

Recipe's preparation

    Dip
  1. 1. Preheat oven to 180 degrees fan forced.

    2. Cut approximately one large or two small beetroot in half.

    3. Put baking paper on an oven tray and place beetroot on paper cut side face down.

    4. Bake in oven for approximately 45 minutes for one large beetroot or until skewer pierces beetroot smoothly.

    5. Peel skins off beetroots whilst they are still hot.

    5. Chop garlic clove/s for 3 seconds on speed 7. Scrape down sides of TM bowl.

    6. Add cooled baked beetroot, and all remaining ingredients to TM bowl and turbo 3 or 4 times or until desired consistency is achieved.

Tip

1. Add salt and pepper if desired.

2. Delicious with vegetables and crackers.

3. Add to lunch wraps or vegetarian tacos as a healthy relish/sauce.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     I've been hunting for some time for the perfect Beetroot Dip. Now I've found it!

    ..... so good I now serve in our little Wine Bar overlooking Bermagui Harbour tmrc_emoticons.p ..... and I'll let you know how our customers respond to it.
