Ingredients
One-Bowl Harissa Bolognese Spaghetti
- 5 g Dried Porcini Mushrooms
- 2 garlic cloves
- 1 brown onion
- 1 level tbsp cumin seeds
- 40 g olive oil
- 400 g Beef mince
- 2 level tbsp tomato paste
- 1 level tsp Harissa paste (adjust to taste)
- 50 g white wine
- 400 g tin diced tomatoes
- 1 level tbsp soy sauce
- 1 level tsp sugar
- 1 level tsp salt
- 400 g spaghetti

- Place dried porcini mushrooms in mixing bowl, mill 10 sec/speed 9. Scrape down sides.
Add garlic, onion, and cumin seeds to mixing bowl, chop 5 sec/speed 5. Scrape down sides.
Add olive oil, sauté 5 min/100°C/speed 1.
Add beef mince, cook 5 min/120°C/"Counter-clockwise operation" /speed
"Gentle stir setting" . Use spatula to break up meat if needed.
Add tomato paste, harissa paste, white wine, diced tomatoes, soy sauce, stock paste, sugar, salt, and water. Cook 8 min/100°C/"Counter-clockwise operation" /speed 1.
Remove MC and add spaghetti through the hole in the lid. Cook 4 min/100°C/"Counter-clockwise operation" /speed
"Gentle stir setting" without measuring cup.
Remove lid. Use spatula to gently press spaghetti into sauce to fully submerge. Replace lid and measuring cup. Cook 2 min/100°C/"Counter-clockwise operation" /speed
"Gentle stir setting" .
Gently stir spaghetti, folding top to bottom. Replace lid and allow to stand 10 min in bowl to finish cooking.
Serve topped with fresh parsley or coriander, or parmesan.
