Ingredients
Risotto
- 2 clove garlic
- 1 --- red onion cut in quarters
- 100 g chorizo sausage roughly cut
- 250 g arborio rice
- 100 g white wine
- 150 g sliced mushrooms
- 800 g water
- 250 g chicken breast or thigh fillets diced
- 3 - 5 anchovies
- 2 tbsp vegetable stock concentrate
- 25 g oil
- 90 g parmesan, add 70g grated cheese into the Risotto and reserve 20g for serving
- 80 g Baby Spinach Leaves
- 1/4 tsp black cracked pepper
- 70 - 100g short cut bacon, Cut into strips or cubes and panfried to use for serving

- Add 90g parmesan cheese into the mixing bowl and grate 10 sec / speed 9. Set aside.
Add 2 garlic cloves, onion and 100g chorizo into the mixing bowl and Chop 4 sec / speed 5, scrape around the bowl, Add 25g olive oil and Saute 5 min / 100c / speed 1. Place simmering basket ontop of the lid.
Add 250g arborio rice and 100g white wine into the mixing bowl and Cook 3 min / 100c /Reverse speed 1.
Place a simmering basket ontop of the mixing bowl.
Add 150g sliced mushrooms, 800g water, 250g diced chicken, 3 to 5 anchovies, 2 tbsp vegetable stock concentrate and black cracked pepper into the mixing bowl. Stir in with a spatula, scraping around the bottom of the bowl then Cook for
18 min / 100c / Reverse speed 1.
Place simmering basket ontop of the lid.
Empty the cooked risotto into a thermoserver, stir through 70g parmesan cheese and 80g spinach leaves and let it rest for 10 minutes before serving.

Tip
Serve the Risotto topped with panfried bacon strips or cubes and a sprinkle with grated parmesan cheese.
Ps. For those that don't like anchovies much, use only 1 or omit altogether.
