Mango Chutney
- 3 garlic clove
- 20 g fresh ginger
- 1 cayenne red chilli, deseeded, roughly chopped
- 120 g brown onion, peeled and quotered
- 25 g olive oil
- 1 tsp nigella seeds
- 1 tsp coriander powder
- 1 tsp Cumin Powder
- 1/2 tsp fennel seeds
- 1/2 tsp tumeric powder
- 1/4 tsp Cardamon powder
- 1/4 tsp cinnamon powder
- pinch of ground cloves
- 100 gdried raisins
- 750 g mango flesh, roughly chopped
- 150 g white vinegar or apple cider vinegar
- 200 g white sugar
- 1/2 tsp Cooking salt

- 1. Add garlic, ginger, cayenne red chilli & onion to the mixing bowl and Chop 3 sec / speed 7. Scrape around the mixing bowl.
- 2. Add olive oil and Cook 3 min / 120c / speed 1. Place simmering basket ontop of the lid.
- 3. Add all the spices (nigella seeds, coriander powder, cumin powder, fennel seeds, tumeric powder, cardamon powder, cinnamon powder & ground clives) to the mixing bowl and Cook 2 min / 120c / speed 1. Place simmering basket ontop of the lid.
- 4. Add mango flash, raisins, white vinegar (or apple cider vinegar), sugar & salt to the mixing bowl, stir to combine using a spatula then Cook 45 min / 100c / speed 1. Place simmering basket ontop of the lid.
- 5. Transfer the cooked chutney into hot sterilised jars, close the lid and ser aside until completely cooled.
- 6. Store the jars in a cool dry place in your pantry for a few days. Best eaten after a few days as the flavours will develop fully while resting.
Tip
This recipe makes about 1300g of mango chutney.
The chutney will keep well unopened stored in the pantry for a couple of month.
Once opened and used store in the fridge until all consumed.
