Ingredients
Brownie Batter
- 250 g butter unsalted, cubed
- 300 g Dark Chocolate Melts
- 150 g brown sugar
- 120 g plain flour
- 1 tsp baking powder
- 3 eggs
Coconut Topping
- 150 g soft icing sugar
- 120 g Desiccated Coconut
- 2 egg whites
Chocolate Topping
- 180 g Dark Chocolate Melts
- 50 g Butter unsalted
- 3 tbsp dessicated coconut

- 1. Preheat the oven to 180c conventional or 160c fan forced oven.
Prepare the baking pan, 18 x 28cm, greased and lined with baking paper, dropping over the sides. - 2. Add unsalted butter and dark chocolate melts into the mixing bowl and Melt 3 min / 60c / speed 2, Scrape around the mixing bowl and repeat Melt 2 min /60c / speed 2.
- 3. Add brown sugar, plain flour, baking powder & eggs into the mixing bowl and Mix 5 sec / speed 5, Scrape around the mixing bowl and repeat Mix 5 sec / speed 5.
Pour the batter into the prepared baking pan and bake 35 min or until just firm to touch. - 4. Add egg whites to the mixing bowl and Mix 10 sec / speed 4.
Add icing sugar & desiccated coconut and Mix 5 sec / speed5. - 5. Pour the coconut topping over the hot brownie and spread to evenly cover all over.
Bake for 10 min or until the top and around the edges is light golden brown in colour.
Take out the oven and set aside. - 6. Add chocolate melts & butter into the mixing bowl and Melt 2 min / 60c / speed 2, scrape around the mixing bowl and repeat Melt 1 min / 60s / speed 2.
Spread the chocolate topping all over the hot slice and sprinkle with desiccated coconut, set aside to completely cool then slice and serve.
