2KG Thick Creamy Yoghurt
- 150 grams milk powder, Full Cream
- 50 grams sugar
- 2000 grams full cream milk
- 30 grams powdered yoghurt, (e.g. easiyo)

- Place milk powder and sugar into mixing bowl.
- Add 1000 grams of the milk and mix 20 seconds/speed 6.
- Add remaining 1000 grams of milk.
- Heat 16 min/90°C/speed 3, without measuring cup.
- Place measuring cup into mixing bowl lid and take bowl out of base. Allow to cool on the bench until temperature drops to 45°C (between 90mins and 2 hours).
- Once cooled, pour a small amount of the cooled milk into a jar. Add 30 grams of yoghurt powder, put lid on and shake to combine. Add this jar of milk to the mixing bowl.
- With measuring cup in place, mix 7 seconds/speed 4. Start "Ferment" fermentation mode for 8 - 10 hours, 45°C.
- Transfer yoghurt to a sealable container and put in fridge for at least 2 hours before serving.
Tip
Including the small amount of sugar helps the yoghurt to thicken.
You can add more milk powder for an even thicker yoghurt with more protein.
Instead of using fermentation mode, I also like to use a Thermoserver. Wrap it in a towel and put into a supermarket chiller bag. Add a warm wheatbag or hottie if it's winter. Open it after 10 hours and you will have amazing, perfect yoghurt!

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
