Ingredients
Gluten Free Grasshopper Pie
- 110 g plain sweet biscuits, gluten free
- 55 g Butter, cubed
- 100 g dark chocolate, pieces
- 1 1/2 teaspoon Gelatine powder
- 65 g cold water
- 3 portions egg yolks
- 60 g caster sugar
- 85 g Creme De Menthe
- 300 gram cream

- Weigh into bowl gluten free sweet biscuits
Apply lid and MC, chop 20 sec, speed 7
Move to separate bowl
Add to bowl 55 gr cubed butter
Melt 1.30 mins, temp 70, speed"Gentle stir setting"
Mix into saved biscuit crumbs then line a 20cm pie dish with the crumbs and press firmly.
Weigh chocolate bits and chop 6 sec speed 10
Melt chocolate 1.30 mins, temp 50,"Gentle stir setting"
Spread chocolate onto biscuit base then freeze.
Meanwhile add 1 1/2 tsp of gelatine to 65 gr cold water into a separate dish - then sit dish on some boiling water to dissolve gelatine and leave to cool.
Clean and dry mixing bowl.
Whip cream using butterfly whisk speed 3.5 ( approx 20 secs but need to observe closely).
Remove butterfly whisk and move whipped cream to separate bowl
Add egg yolks and sugar into mixing bowl and mix 1min on speed 4
Add the gelatine and Creme de Menthe and mix 20 sec speed 4
Add the reserved whipped cream and fold into the egg mixture 1 min speed 1.5
Pour into the biscuit base and then freeze until ready to serve. Takes a few hours to freeze
Gluten Free Grasshopper Pie
Tip
Can be made in advance and kept in freezer. Take out of freezer 15 minutes prior to serving to make it easier to cut base.
Mill sugar for caster sugar
Can be made in smaller dishes
Can easily be made non gluten free.
