Ingredients
Passionfruit Curd
- 150 grams Butter, (salted, unsalted and can be approx- how buttery do you want it?)
- 150 grams sugar, of your choice- approx (how sweet do you want it?)
- 2 eggs, (whole- OR if you like your curd thick, use egg yolks only- I recommend using 4 yolks if using just yolks)
- 220 grams passionfruit pulp, (approx-you can use more or less and can strain if you like, but I like using the pulp as it is!)
- 25 grams lemon juice, (approx- feel free to ramp up and use a bit more)

- Clean and rinse sealable storage jars and lids in very hot water, and leave to dry.
- Place all ingredients into mixing bowl and Cook 4 min/80°C/speed 4.
(Got a TM6? You can choose thicken mode and it will do the timing for you to 80 degrees!)
Check curd has thickened - if not, prolong cooking time by 1-2 minutes. Transfer into sterilised jars, loosely covering with lids and allow to cool completely. Once cool, seal jars and place into refrigerator until ready to serve (see Tips).
Passionfruit Curd
Tip
I love passionfruit curd- you will likely find it won't last long but with a clean utensil in the jar you will get around 1 month if kept in the fridge, or it also freezes well.
Ideas for use: it is really versatile - it is great in/or on pastries, passionfruit meringue pie instead of lemon meringue pie, drizzled over desserts like cheesecakes or pavlova, as a filling for sponge cakes, with fruit or yoghurt, on toast, english muffins, crumpets, scones, in or over muffins, on granola. It is absolute favourite crepe and pancake/pikelet topping!
The curd will set firmer as it cools.
Easily doubled (cook 7 minutes) or tripled (cook 10 minutes) in step 2, same temp.
To prepare jars, thoroughly wash jars and lids in hot, soapy water. Rinse by pouring over boiling water (I do this in the kitchen sink).

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
