Ingredients

  • 50 grams almonds
  • 40 grams extra virgin olive oil, (or lightly flavoured oil- vegetable oil works ok too)
  • 2 eggs
  • 40 grams Milk
  • 140 grams sugar
  • 1 teaspoon vanilla extract (or essence)
  • 150 grams Self Raising Flour
  • 7 granny smith apples, peeled, cored and chopped roughtly into bite-sized pieces (approx 1cm)

Recipe's preparation

  1. Preheat oven to 190C

  2. Weigh almonds into TM Bowl and grind for 6-10 sec on speed 7 (until it become a fine almond meal).

  3. Weigh in the remaining ingredients except flour and mix for 10 sec on speed 3.5

  4. Add self raising flour and roughly chopped apples and mix for 6 sec on Counter-clockwise operation"Counter-clockwise operation" speed 3.5

  5. Pour mixture into a greased or lined flan tin and bake for 45-50 minutes or until golden brown.

  6. Once cooled, dust with icing sugar for enhanced presentation if desired! Lovely served with a dollop of cream.

Tip

This recipe is easily 'tweaked' to your liking - try adding some slivered almonds, currants, dried blueberries or cranberries to the mix in the last step!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     This was delicious and so easy to make, it was a big hit. I served mine with cinnamon icecream, but it would be just as nice with some whipped cream. Will be making this one again for sure
