Meat Free Burger Patties
- 1 canned cannellini beans
- 2 cloves garlic, peeled
- 1-2 sprigs parsley, leaves
- 2 spring onion, 5cm pieces
- 40 grams dukkah
- 1 egg
- 1 level tbsp Vegetable stock paste
- 2 teaspoons plain flour
- 50 grams breadcrumbs
- 100 grams feta

- Drain cannellini beans and set aside.
- Place peeled garlic cloves, parsley leaves, and spring onion into Thermomix®. Chop 3 seconds on Speed 7.
- Add drained cannellini beans to the bowl, along with dukkah, egg, vegetable stock paste, plain flour, bread crumbs and feta. Mix for 10 seconds on speed 5 or until to a texture of your liking.
- Using wet hands, shape patties into burger patties or rissoles. Cook until golden and cooked through.
Tip
This recipe is yummy either smooth, or with small unprocessed lumps of beans/feta. I can't decide! To make super smooth, you may need to scrape down and reprocess a few times if your mixture is quite thick depending on how drained your cannelini beans were, the size of the egg, etc.
It may be easily doubled. I prefer to do this and shape and freeze in separated layers. They actually cook very well from frozen - adjust the heat to allow time for the patties to cook through.
If the patties are for a burger, shape to the size of the roll that you would normally use. I prefer mine to be approx 1.5cm thick, however you can make them thicker if you prefer.
If you do not have Dukkah, you may like to
1. Make some! Or
2. Substituted with 50g ground almond meal (or preferred nutmeal), some sesame seeds and 1 teaspoon each of ground coriander and cumin if available along with a couple of pinches/grinds of salt and pepper (this is basically dukkah)! Double this if you are doubling the recipe.
This recipe is very versatile- to make vegan, use your preferred egg substitute and use a firm tofu instead of the feta cheese.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
