Ingredients

Deb's Corn fritters

  • 250 grams self-raising flour
  • 250 grams Milk
  • 2 eggs
  • 600 grams sweet corn kernels
  • 100 gram Danish feta cheese
  • spring onions, White part for fritters, green for garnish
  • to taste salt
  • to taste pepper, ground
  • olive oil spray

Recipe's preparation

    Method
  1. Drain corn if tinned, defrost if frozen.

    Slice spring onions, keep the green for garnish.

    Add flour, milk and eggs to the bowl and mix for 30 seconds on speed 4.

    Add the corn, spring onion, feta, salt and pepper. Mix for 20 seconds, speed 3.

    Place spray oli into a moderately heated frying pan and place dollops of the mix to make the fritters. Cook until golden on each side.

    Serve with your choice of toppings. Even a poached egg works well 😋
