Zucchini Balls
- 340 g zucchini
- 1 egg
- 60 g Greek yoghurt
- 30 g plain flour
- 30 g cornflour
- 0.5 teaspoon baking powder
- 1 teaspoon salt
- Oil for frying
Yoghurt Sauce
- 1 clove garlic
- 1 sprig fresh mint, leaves only
- 125 g Greek yoghurt
- 60 g feta cheese
- 2 tablespoons lemon juice
- 2 tablespoons extra virgin olive oil

- Grate zucchini in Thermomix®Cutter. Add grated zucchini to simmering basket over sink and sprinkle with salt and leave for 10 minutes.
Strain out excess moisture from zucchini.
Add zucchini, plain flour, corn flour, baking powder, egg and greek yoghurt to TM bowl. Reverse "Counter-clockwise operation" speed 4 for 20 seconds or until combined.
Mixture should resemble a chunky, soft, wet doughy mixture.
Heat oil in frying pan on meduim heat. Using a tablespoon scoop small balls of the mixture and add to the frying pan, fry 5 balls at a time until golden brown. Drain the balls on paper towel and serve warm. - Add Garlic and Mint leaves to TM bowl. Chop"Blend" speed 7 for 4 seconds. Scrape down sides of mixing bowl with spatula then Chop"Blend" speed 7 for 4 seconds.
Add Greek Yoghurt, feta cheese, lemon juice and extra virgin olive oil to TM bowl and combine reverse "Counter-clockwise operation" speed 3 for 15 seconds.
Serve immediately with Zucchini Balls.

Can be served with hommus or Greek yoghurt mixed with chopped fresh mint.

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
