Ingredients
Chana Dhal & Eggplant Curry
- 1 onion, quartered
- 1 tbsp oil
- 2 shallots, peeled
- 1 tsp Minced Ginger
- 1 clove garlic
- 1 tomato, quartered
- 2 stalks curry leaves, fresh, leaves only
- 0.5 tbsp ground turmeric
- 1 carrot, diced
- 1 potato, diced (optional)
- 1 eggplant, diced
- 250 g chana dhal, rinsed and soaked overnight
- 500 g water
- 2 dried chillies, optional
- 0.5 tbsp salt, adjust to taste

- 1. Prep the Aromatics
Add the yellow onion, shallots, ginger, and garlic to the Thermomix bowl. Chop for 5 seconds / Speed 5. Scrape down the sides.
2. Sauté Add the oil, curry leaves, and dried chili peppers. Sauté for 5 minutes / 120°C / Speed 1.
3. Add Vegetables and Spices Add the turmeric powder, tomato, carrot, potato, and aubergine. Cook for 5 minutes / 100°C / Reverse Speed 1.
4. Cook the Dhal Add the soaked chana dhal, water, and salt. Cook for 40 minutes / 100°C / Reverse Speed 1.
5. Adjust Consistency Check the consistency of the dhal. If you prefer it smoother, blend for a few seconds at Speed 3. Add more salt if needed.

Tip
I adapted this chana dal and eggplant curry for the thermomix. It’s mild enough for the whole family and goes well with flatbread or grains. It makes enough for several serves, so you will have enough to freeze and reheat later.
Chana dal is quite a hard lentil made from split desi chickpeas. It will cook faster if soaked overnight. If you don't have time to soak, soak it in hot water for 1 hour or substitute it with red lentils, which do not require soaking.
