Ingredients

Cranberry & Pistachio Biscotti

  • 80 grams dried cranberries
  • 75 grams shelled pistachios, unsalted
  • 150 grams Butter, cut into cubes
  • 2 eggs, large
  • 1 tsp orange zest, can substitute for lemon zest
  • 240 grams Flour, Plain
  • 1.5 level teaspoons baking powder
  • 0.25 level tsp salt
  • 150 grams White Chocolate Chips, for melting and drizzling (optional)

Recipe's preparation

    Method
  1. Preheat oven to 350°F/ 180°C. Line a baking sheet with parchment, lightly grease it with non-stick stick spray, and set aside.
    Place 80g dried cranberries into mixing bowl and chop 7 sec/speed 7, scrape down sides of mixing bowl with a spatula.
    Add 75g unsalted pistachios, shelled and chop 2 sec/speed 7. Transfer to a bowl and set aside.
    Place 150g sugar and 113g unsalted butter, room temperature, diced into mixing bowl and whip 1 min/speed 3.5. Scrape down sides of mixing bowl with spatula.
    Add two large eggs and 1 tsp grated orange or lemon zest and mix 1 min/speed 3.5.
    Add 240g/ 2 cups all-purpose flour, 1.5 tsp baking powder, 1/4 tsp salt, and the reserved chopped cranberry-pistachio mixture, and mix 1 min 30 sec/ reverse /speed 1.
    Transfer the dough to a prepared baking sheet and shape it into a log (approx. 13 in. x 3 in.) and bake until lightly golden, approx 30-35 minutes (350°F/ 180°C). Remove tray from oven and let cool (30 minutes). Meanwhile, reduce oven temperature to 300°F/ 150°C.
    Cut dough into ½ inch slices with a bread knife. Place onto baking sheet, cut side up, and bake for 10-15 minutes (300°F/ 150°C).
    Flip the biscotti over and bake for a further 10-15 minutes (300°F/ 150°C).
    Allow it to cool completely. In the meantime, clean the mixing bowl.
    Place 150g good quality white chocolate (eg Ghiradelli white vanilla flavoured melting wavers) into the mixing bowl and chop 10 sec/speed 5.
    Scrape down the sides of the mixing bowl with a spatula, then melt the chocolate at 2 min/70°C/speed 1. Use a fork to drizzle melted white chocolate over the biscotti. Refrigerate to allow the chocolate to set.

Tip

This is a Thermomix adaptation of the "Giada de Laurentiis Holiday Biscotti". The original recipe can be found at https://www.foodnetwork.com/
The double bake is necessary to make the biscotti crisp and keep it fresh for longer.
If using chocolate, you can also melt the chocolate in the microwave at 30-second increments until it is soft enough to drizzle.
These biscotti can be made ahead. Store them in an airtight container for up to 4 days, or wrap them in foil and freeze them in resealable plastic bags for up to 3 weeks.
