Ingredients

Chocolate beetroot pistachio cake

  • 50 g shelled pistachios
  • 250 g Beetroot, raw, washed and cut into pieces
  • 200 g dark chocolate, chips or broken into pieces
  • 150 g brown sugar
  • 100 g self-raising flour
  • 60 g sunflower oil, substitute with olive oil or canola
  • o.5 tsp bicarbonate of soda
  • 0.5 tsp baking powder
  • 1 tsp vanilla essence, or extract
  • 2 eggs, large

Chocolate ganache

  • 80 g dark chocolate, in chips or pieces
  • 60 g cream, can substitute for milk or butter (the higher the fat content the shinier the ganache)
  • 50 g shelled pistachios, for decorating the cake (optional)

Recipe's preparation

    Cake
  1. Preheat oven to 160°C. Grease and line the sides and base of a cake tin (Ø 23 cm) with baking paper.
  2. Mill the pistachios by placing them into the mixing bowl and mill at 10 sec/speed 8. Scrape down the bowl and mill again if needed
  3. Place the beetroot into the mixing bowl and grate 4 sec/speed 5. Scrape down the sides and lid of the mixing bowl, then grate 4 sec/speed 5. Transfer to a bowl and set aside.
  4. Place the chocolate chips in the mixing bowl and grate 8 sec/speed 8 then melt 3 min/50°C/speed 4. Scrape down sides of mixing bowl with spatula then melt again 1 min/50°C/speed 4
  5. Add 100 g self-raising flour, 200 g brown sugar, ½ tsp bicarbonate of soda, ½ tsp baking powder, 1 tsp vanilla extract, and 60 g sunflower oil, then mix 20 sec/speed 5. Scrape down the sides of the mixing bowl with a spatula
  6. Add 2 large eggs, drained and the reserved grated beetroot mixture, then mix for 20 sec/speed 5. Transfer to prepared tin. Bake for 55-60 minutes (160°C) until a skewer inserted in the centre comes out clean. Leave to cool in the tin. Meanwhile, clean the mixing bowl
  7. Once the cake is cool, remove it from the tin and place on a wire rack to allow the bottom of the cake to dry off from the steam
  8. Ganache
  9. Crush the pistachios 8 sec/speed 5 and set aside.
  10. Place dark chocolate chips into the mixing bowl and grate at 10 sec/speed 7. Scrape the chocolate down to the bottom
  11. Add milk or cream, and cook for 15 min/100°C/speed 3
  12. Pour chocolate ganache over the baked cake and spread it evenly
  13. Decorate the cake by sprinkling the chopped pistachios over the icing

Tip

1. For a flavour boost you can add espresso powder when mixing the cake
2. To avoid your hands staining, you can wear gloves when preparing the beets
3. This cake can stay outside the fridge for 1 day, but its best to refrigerate the leftovers
4. you can make this cake ahead, but keep it in the fridge if it's being served the next day
5. This cake is quite a heavy, dense cake, so you can slice it horizontally rather than in wedges to create over 20 serves
