Ingredients
Nutritious but Delicious Banana Bread
- 65 g unsalted butter, cubed
- 65 g apple, cubed
- 350 g ripe bananas, approx 4 bananas
- 50 g caster sugar
- 2 eggs
- 220 g wholemeal flour
- 2 tsp baking powder
- 1 pinches salt
- 1 tsp bicarbonate of soda
- 100 g milk, oat, substitute with any milk
- 2 tsp vanilla essence
- 1 tbsp Flaxseed
- 30 g walnuts, chopped
- 1 tsp ground cinnamon

- 1. Preheat oven to 180°C. Grease or line a deep-sided loaf tin (25 x 10 x 11 cm) and set aside.
2. Grate apples 20 sec/speed 6 (or use apple sauce)
3. Place bananas, butter and sugar into mixing bowl and mix 20 sec/speed 6. Scrape down sides of mixing bowl with spatula.
4. Add eggs, flour, baking powder, salt, bicarbonate of soda, oat milk, vanilla, flaxseeds, chopped walnuts and cinnamon and combine 20 sec/speed 4.
5. Pour into prepared loaf tin and bake for 50-60 minutes (180°C) or until a wooden skewer inserted into the centre of the bread comes out clean.
6. Allow to cool in tin for 30 minutes before turning onto a wire rack. Serve warm or allow to cool completely before transferring into a sealable container until ready to use.

This is a variation based on the Banana Bread recipe from Cookidoo The Basic Cookbook.
Here’s how the changes impact the nutrition:
Calories: Reduced from ~2830 kcal to ~2200 kcal for the whole batch (183 kcal per slice for 12 servings). Saturated Fat: Reduced from ~69 g to ~39 g (3.2 g per slice).
Fibre: Increased from ~8.5 g to ~38.5 g for the batch (3.2 g per slice).
Protein: Increased from ~43 g to ~50 g for the batch (4.2 g per slice).
You can use the Cookidoo Apple Sauce recipe to whip up a batch of homemade apple sauce., but you can also use raw grated apple.
