Deb's Egg drop soup

  • 250 grams fresh tomatoes
  • 10 grams Neutral tasting oil
  • 1 level tbsp salt
  • 1 cloves small clove garlic
  • 1 spring onion, white part only
  • Dash of white pepper
  • 2 Whole.eggs, whisked
  • 500 grams water
  • spring onion tops sliced

Recipe's preparation

    Method
  1. Chop your tomatoes in half or quarters depending on their size and sprinkle with a quarter of the salt. Let the tomatoes sit for 5 minutes in a bowl.
  2. Add garlic to the bowl and mix for 3 seconds on speed 9. Scrape down the bowl and add tomatoes, spring onion slices and oil. Cook for 5 minutes, VAROMA speed 1, simmering basket on top.Warm Up"Warm Up"
  3. Set your Thermomix to 1 minute. Put the measuring cup into the lid and pour your whisked eggs onto the mixing bowl lid. They will drizzle down into the soup. Lift the measuring cup if needed.
  4. Pour into bowls and garnish with the green spring onion.
    Enjoy x
