Ingredients
Stuffed Mushrooms with cream cheese & bacon
- 2 cloves garlic
- 6 pieces fresh mushrooms, Flat white mushrooms were used in this recipe, see tips
- 2 pieces spring onion, remove roots and cut into 2-3 cm pieces
- 6 pieces Bacon slices, eye removed
- 1 pinches salt
- 1 pinches pepper, ground
- 250 grams cream cheese

- Remove the stalks from the mushrooms add to the thermomix bowl and chop "Blend" Speed 5, 2 seconds - set aside in a separate bowl (no waste)
- Without washing the thermomix bowl, add the 2 peeled garlic cloves and chop "Blend" Speed 8, 2 seconds
- Leave the chopped garlic in the bowl, add the spring onion to the thermomix bowl and chop "Blend" Speed 8, 2 seconds
- Add the chopped mushroom back into the mixing bowl
- Add pinch of salt and pepper, and cream cheese (cut into 3-4 pieces) "Blend" Speed 5, 20 seconds
- Preheat the oven 200°C and prepare a baking tray with a liner
- Spoon the mixture into each mushroom, then wrap each mushroom with a piece of bacon (no eye) and secure with one tooth pick
- Bake for 15 mins 200°C or until ready, serve immediately
Method
Tip
-I used white flat mushrooms, I wouldnt use anything bigger, they were the perfect size for the flavour.
-You will need one toothpick per mushroom to secure itBacon slices are the middle only, not the eye
-Its a stronger garlic flavour so if thats not for you then drop it to 1 clove.
-Be creative- its a great base - let me know if you made a variation!
