- 80g pure cream

"Sous-vide" Grease a springform tin (Ø 16 cm) with oil (see tip) and line base with baking paper.
- Place butter in mixing bowl and melt 1 min 50 sec/80°C/speed 1.
- Add biscuits and crush 10 sec/speed 8. Transfer to prepared tin and press down with the back of a spoon forming a firm biscuit layer. Set aside in fridge to chill. Meanwhile, clean and dry mixing bowl then make filling.
- Place sugar in mixing bowl and grind 10 sec/speed 10. Scrape down lid and sides of mixing bowl with spatula.
- Insert butterfly whisk. Add cream and mix 40 sec/speed 3.5.
- Add cream cheese and melted caramilk chocolate then mix 20 sec/speed 4. Scrape down sides of mixing bowl with spatula then mix again 10 sec/speed 4. Remove butterfly whisk. Transfer to tin on top of biscuit base, smoothing surface with spatula. Chill in fridge for at least 6 hours, preferably overnight. Meanwhile, clean mixing bowl.
- Place chocolate into mixing bowl and grate 10 sec/speed 8. Scrape down sides of mixing bowl with spatula.
- Add cream and heat 2 min/50°C/speed 3. Allow ganache to cool slightly and thicken. Use as required. Place cheesecake on wire tray , pour
ganache all over . Decorate how you want .

Before pouring chocolate ganache over the cheesecake, make sure cheesecake has been set and cooled down .

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
