Patty
- 3 chicken breast fillet, skinless, cut into pieces
- 1 egg
- 1/2 tsp salt
- 120g cornflour
- canola oil (or oil by choice)to fry the patties in
Batter
- 240g water
- 125g plain flour
- 80g cornflour
- 1 egg
- 2 tablespoon Yellow Mustard
- 1 tablespoon Garlic powder
- 1 tablespoon Onion powder
- 1 tsp salt
- 1 tsp ground black pepper
Sauce
- 250g mayonnaise
- 1 tsp mustard powder
- 1 tsp Onion powder
- 1/2 tsp salt
Serving
- 6 burger buns
- shreaded lettuce

- 1. Add chicken breast fillets into the mixing bowl and mince 10 to 12 sec / speed 6. Scrape around the mixing bowl.
- 2. Add egg and salt to the mixing bowl and Mix 5 sec / speed 5 or until combined.
- 3. Form chicken patties, dip each one in cornflour, place on a tray and set asaide.
- 4. In a clean mixing bowl add the Batter ingredients (water, plain flour, cornflour, egg, yellow mustard, garlic powder, onion powder, salt & pepper) and Mix 10 sec / speed 5, scrape around the bowl and repeat until the batter is at a smooth consistency.
Empty into a large bowl then dip each patty into the batter, shake off excess, place them onto a tray lined with baking paper and place into the freezer for 1 to 2 hours or until firm. - 5. Wash and dry the mixing bowl then add the sauce ingredients (mayonnaise, mustard powder, onion powder and salt) and Mix 10 sec / speed 5, scrape around the mixing bowl and repeat if necessary until the sauce is at smooth consistency.
Transfer the sauce into a jar or a bowl and place in the fridge until ready to use. - 6. Fry the chicken patties in canola oil in a deep fryer or a large frypan, until golden in colour. Add more oil if needed while frying.
Drain oil on some paper towels and place into a thermoserver to keep warm while frying the remaining patties. - 7. Assemble the burgers by placing one patty on each burger bun, top with sauce and shreaded lettuce.
