Ingredients
SALAD
- 150g Vermicelli noodles
- 100g red capsicum , diced
- 3 Shallots, thinly sliced
- 1 carrot, peeled and grated
- 100g red cabbage, thinly sliced
- 100g white cabbage, thinly sliced
- 100g snow peas, thinly sliced
- 50g coriander leaves
- 25g mint leaves, chopped
- 1 cucumber, julienned
- 100g fresh bean sprouts
- 80g roasted peanuts, roughly chopped
DRESSING
- 1 garlic clove
- 20g fresh ginger, thinly sliced
- 1/2 cayenne red chilli, deseeded
- 80g Sweet chilli sauce
- 1 tablespoon fish sauce
- 50g lime juice ( 2 to 3 limes)
- 2 tablespoons sesame oil
- 1 tablespoons light soy sauce
- 1 tablespoons Honey or Maple Syrup
GARNISH
- 1/2 to 1 cayenne red chilli, sliced, deseeded - optional, extra coriander and mint leaves, extra roasted peanuts

- 1.Prepare all the salad veggies and place into a large serving bowl, set aside (can put in the fridge while preparing the noodles and the dressing)
- 2. Soak the vermicelli noodles in a thermoserver or a pan, in hot water for 5 to 7 min or until soft.
Drain the water using the varoma deep tray or the simmering basket, then rince the noodles in cold water, drain excess water and place the noodles in the sering bowl with the veggies, set aside. - 3. Add garlic clove, ginger & red cayenne chilli into the mixing bowl and chop 3 sec / speed 7, scrape around the bowl and repeat if necessary.
- 4. Add the remaining dressing ingredients into the mixing bowl and mix 10 sec / speed 5
Scrape around the mixing bowl then pour the dressing over the top of the noodles and veggies in the serving bowl and mix well to combine. - 5. Garnish the salad with extra coriander leaves, mint leaves and roasted peanuts.

Tip
I prefer to cut/slice/grate my veggies for this salad by hand but if you prefer you can use your thermomix and/or cutter to do so.
You can turn this salad into a main meal by adding cooked chicken or other meats by choice, at the same time as pouring the dressing in, and mix well to combine all ingredients.
