Ingredients
Roasted Carrot Hummus
- 2 carrots, chopped into 3 cm pieces
- 15 grams olive oil, plus extra 15gm for serving
- 200 grams Canned Chickpeas, drained and rinsed
- 30 grams tahini
- 1/2 teaspoons ground cumin
- 1/2 teaspoons paprika
- 10-20 grams fresh ginger
- 2 cloves garlic
- 5-10 grams lemon juice
- 40 grams seeds, toasted or dukkah
- 80mls water

- Preheat oven to 220C
- Toss the carrots with the olive oil, salt and pepper
- Place on a tray lined with baking paper and roast for 15-20 minutes, or until tender and browing along the edges.
"Closed lid" Add 10-20 grams of fresh ginger into the bowl. Chop 3 sec / Speed 7
- Scape down sides of the bowl
- Add roasted carrots
- Add 200 grams chickpeas (drained and rinsed)
"Blend"
"Closed lid" Blend 5 sec / Speed 5 until coarsely chopped
- Add 30 grams tahini
- Add 1/2 teaspoon cumin
- Add 1/2 teaspoon paprika
- Add 5-10 grams lemon juice
- Add salt and pepper to taste
"Closed lid"
"Blend" Blend 10 sec / Speed 6 until combined
- Scrape down the sides
"Blend" With Thermomix running on speed 3, slowly drizzle in 1/3 cup (80ml) of water. Increase to Spped 5 for 10-15 sec or until creamy.
- Adjust texture by adding more waater if necessary
- Adjust season with more salt, pepper or lemon juice
- Transfer to a serving dish and drizzle with extra olive oil and sprinkle with toasted seeds or dukkah.

Makes 2 cups
This hummus is sweet and fragrant, rather than hot, so is a good option for lunchbox snacks as well as pre-dinner nibbles, served with crackers and crudites. It only uses 1/2 can chickpeas, so freeze leftover for a subsequent batch of hummus.
