Ingredients

Double Choc Muffins

  • 300 g ripe bananas, peeled, (About 3 bananas)
  • 125 g vegetable oil
  • 2 eggs
  • 125 g brown sugar
  • 225 g plain four, (use Gluten-free flour if required)
  • 35 g cocoa powder
  • 1 level tsp bicarbonate of soda
  • 100 g chocolate chips, (Or chopped/broken chocolate)

Recipe's preparation

    Double Choc Banana Muffins
  1. Add peeled bananas, oil, eggs and brown sugar into the mixing bowl. Mix 5 seconds/speed 5.
  2. Add flour, cocoa powder and bicarbonate soda. Mix 5 seconds/speed 5.
  3. Scrape down the sides of your bowl. Add chocolate chips and mix 2 seconds/speed 5.
  4. Pour mixture into a lined muffin tray and bake in a Moderate (180 degrees Celcius) oven for approximately 15-20 minutes. Allow muffins to cool for 5 minutes in the time before transferring onto a cooling rack.

Tip

These muffins are best eaten on the day they are made. The muffins can be frozen for school lunchboxes, snacks, morning and afternoon tea or even a breakfast on the go. Defrost at room temperature if you have time or in the microwave in a hurry.
You can replace the plain flour with gluten-free flour for a gluten-free version.
