- 125 grams Butter, cubed
- 1/2 level tsp Vanilla Bean Paste
- 30 grams icing sugar
- 125 grams plain flour
- 40 grams Corn Flour
Butter icing
- 100 grams Butter
- 150 grams icing sugar
- 1/2 level tsp Vanilla Bean Paste

- Weigh butter and soften"Closed lid" 50 degrees for 2 minutes on speed 2
- Add vanilla and icing sugar and mix for 10 seconds on speed 3, scrape down the sides and repeat.
- Weigh and add in plain flour and corn flour and mix for 10 seconds on speed 3
- Scrape down the sides and repeat mix again for 10 seconds on speed 3
- Line trays with baking paper and use around a teaspoon size of mixture for each biscuit- roll into balls and place on tray leaving a small amount of room between each ball.
- Using icing sugar to keep your fork from sticking, press each ball a little flatter using the fork.
- Place into the oven at 160 degress for around 10-12 minutes, remove from oven and cool before icing them together
- For butter icing, use cleaned and dry bowl to add remaining butter, icing sugar and vanilla bean paste to.
mix for 10 seconds on speed 4, scrape down sides and repeat. - To assemble, use a knife to gently but generously add icing to the underside of half the biscuits. try pairing them each with like sized biscuits and stick together.

To be honest I always double this recipe as they get eaten in a flash !
I adapted this recipe from the one I had always used in my old mixer before i got my TM31 about 9 years ago. I use it in my TM6 now and have no idea where the origional version of these family favourites even came from !
i prefer to use vanilla bean paste and I also make that in my TM6- making it is so much cheaper than buying it. The recipe is Vanilla paste and is part of the sweet sauces collection. It's available on Cookidoo

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
