Ingredients

Whoopie Pie Cake Batter

  • 130 g softened butter
  • 190 g brown sugar
  • 300 g buttermilk
  • 1 egg
  • 1 level teaspoon vanilla essence
  • 45 g cocoa
  • 360 g plain flour
  • 1 1/4 level teaspoon baking soda

Whoopie Pie Filling

  • 250 g cream cheese
  • 190 g icing sugar
  • 1 level teaspoon vanilla essence

Recipe's preparation

    Batter
    1. Cream the butter and brown sugar together on Speed 3 for 20 seconds
    2. Scrape down the bowl and continue to cream for another 20 seconds on Speed 3.
    3. Add the egg, vanilla & buttermilk and mix on 10 seconds on Speed 5
    4. Scrape down and add flour, cocoa and baking soda then mix on Speed 5 for 20 seconds
    5. Scrape down once more and mix for a further 15 seconds on Speed 5
    6. Pour mixture into a piping bag, and pipe 4-5cm circles on to baking paper and leave at least 6-8 cm between each round - they will spread.
    7. Place 1 tray at a time into the oven and bake for 10-13 minutes at 180C
    8. When the cakes have puffed up and test one with a skewer – if it comes out clean, then they are ready
    9. Using a spatula, place them on a wire rack to cool, then cook the rest in the oven
  1. Whoopie Pie Filling
    1. Place all ingredients in the bowl and cream together on Speed 4 for 30 seconds
    2. When cakes are cool, pipe filling on to one cake and sandwich together

Tip

Make your own butter, that way you have fresh softened butter and the buttermilk …..it’s cheaper

A better consistency batter is achieved using TMX buttermilk - store bought buttermilk is very thick and produces a dense cake which is not ideal

I used a piping bag, but you could just use a spoon to drop your mixture, they will just look more rustic

Whoopie pies are best served the next day, it allows the vanilla time to settle in the frosting

If you do want to eat on the day you make them, then consider using less vanilla in the frosting

    Do you think I could halve normal milk and store bought buttermilk to thin the buttermilk consistency instead of making my own bm?

    Saw this on the TM in Australia Facebook page as recipe of the day. Made them for my son's school fete and they were great!  Easier to transport than cupcakes too!  I have a whoopie pie pan that I won in a competition and used that - there was a bit of a delay as I had to wait for them to cool a bit, get them out and then wipe down the pan and refill, but they don't take long to cook so it was ok. They came out perfectly and the filling was yummy, have to say they were much nicer than the packet ones I have tried before. Thanks!

    Made these last week. Yum and easy. I think I got 20 'sandwiches' out of the mix, will make them a little smaller next time. They went fast!!
