  • 600 grams water, blood temp
  • 2 tablespoons sugar (40g)
  • 3 level tsp yeast (10g)
  • 4 tablespoons Oil (30g), oil of choice
  • 800 gram plain flour or bread flour, or 6 cups
  • 1 level tsp salt

Recipe's preparation

    Māori Fried Bread
  1. 1. Combine Water , yeast , Sugar in Thermomixer
    Set mixer at 37 degrees Speed 2 for 30 seconds to activate the yeast

    2. Add Flour , Oil , Salt
    Add 800g Flour 30g Oil , 1 tsp Salt to the bowl
    Mix for 10 sec at Speed 5 to combine ingredients

    3. Kneading the Dough
    Set Thermo to Knead Mode for 2 mins

    4. Resting The Dough

    Allow the Dough to rest so it can relax an double in size 15 - 20 mins
    Can leave in bowl or onto a Silicone mat wrapped an kept warm

    5. Once Rested can work dough bring togethor then Flatten to about 2cm thickness
    cut into shapes

    6. Frying

    Use any oil or Fat of choice
    Heat oil to about 180 deg test for temp by thermometer or chop stick test dip in if bubbles then oil at temp
    Fry till golden on both sides an tap bread to hear for the Hollow sound if so bread is cooked
