Hi Ashveena, they are pretty interchangeable. We test our recipes using instant yeast but if a recipe asks you to add the water and yeast together first then you can substitute active dry yeast. Active dry yeast may need a slightly longer proving time too. Make sure you use visual cues like doubling in size to guide you.

I personally always use the instant driedone- it's in a red container & available in the supermarket...It's easy to use up a whole container because now i'm making bread, scrolls, pizza dough etc all the time.
