To make caster sugar I recommend no more than 200g sugar at a time and 2 sec at speed 7. Anymore and it's icing sugar.


I just did 220grams of white sugar for 3 seconds on speed 7 and it came out perfect, I think speed 9 is far to fast and turns it to icing sugar


We didn't have any caster sugar for the Basic recipe shortbread so experimented with the amount: 50g and found 4 sec at speed 7 worked okay to make caster sugar. Not sure as to how to adjust time and speed for larger amounts but interested to read other experiences.

 


I have tried this: 200g for 3 secs/speed 10


I am trying to work out how to turn Raw Sugar and also Refund White Sugar into Caster Sugar. I can make Icing Sugar but nor caster sugar. Can anyone help me with instructions?
