Forum Apple-Pear-Ginger Sorbet

The fruit would be fresh. I think I would add the ginger in with the sugar to pulverise it, but not sure how much. Apples and Pears should be about 200grams (from memory, check what the fruit sorbet in EDC says).
I will aquire some ginger in the next few days and try this it looks good.

Please could someone help me track down the exact detals of the sorbet described in the article above?
I would like to know if the fruit can be used fresh or if it needs to be cooked first and what about the ginger - how much and do we grind it separately or with the sugar?
