Hi Amanda
I like to make my butter then weigh it. Then I add half the weight in oil and the same amount of cold water. ie 300g butter, 150g oil, 150g water. I usually use grapeseed oil but you could use olive oil if you like. I would use a light olive oil so that it doesn't taste too strong.
There are many other recipes that you can find via goggle.

Hi
Any idea how much olive oil and salt to put in butter to make it an olive oil spread?
Haven't quite managed to get it right yet?
