Ill try coconut milk cream at home...Its so easy
Left out on the bench it would keep around 6 hrs, (according to what I have read from the recipe community), however in the incredibly hot weather we have been experiencing lately it may go off sooner. I suppose it would last for a day or so in the fridge, but freezing it would be the best option if you weren't going to use it straight away.
One time when we were in the Philippines we bought some freshly ground up coconut flesh from the market. We had no fridge so it was left out, by the next morning it was a brown, bubbly, soggy mess!
If you are going to use it in a recipe, then make the milk as the first step of your recipe and keep it in the fridge. It doesn't hurt to have a can or two in the pantry in case you run out of time. Kindest Regards Anne

2 cups coconut, 4 cups water. Cook 3 min, 100 deg, Speed 1.
Blend 1 minute, Speed 4
Pour into seive that is lined with cheesecloth that is over a bowl. Allow to drain. Squeeze out any liquid left in cheesecloth.

Someone posted a recipe, I can't remember off the top of my head what it was, but they said you could make your own coconut milk. It was for a chicken something or other, so the recipe title was not how to make coconut milk. Anyway you put 100g dessicated coconut into jug with 500 g water, process on speed 9 or 10 for 3mins, then strain, this gives you coconut milk, which for my purposes has been quite sufficient. There are recipes in the Indian Cookbook for coconut milk and cream which are a little more involved. I haven't tried them yet. Someone else recently posted a coconut cream recipe as well. Anyhow the cream rises to the top of the milk after a while and can be scooped off. I have never bothered with this, I've just used the milk straight away. Apparently this type of milk/cream doesn't keep very long so if it is not used within 6 hrs then it should be frozen.

just a qu. have you tried buying a fresh coconut from a fruit and veg market and puraeeing it and then put the puree into the TM basket and strain?
As a new thermomix user, I am wondering if anyone can point me in the right direction. I would like to make my own coconut cream/milk and I haven't been able to find anything on the forum so far to advise me on how to make it.
