I have tried to cream butter and sugar unsuccessfuly for 3 times this afternnon. Will try to folow the suggestion above - pulverisinf the sugar first! Thank yoiu  Smile Smile Smile


At the back of the 'Food Lovers Calendar' there are the calendar notes and tips, one of these is for creaming butter and sugar. The recipe is:

Pulverise sugar first for 10-20 seconds on speed 9.Add butter to bowl and chop for 5 seconds on speed 8.Insert Butterfly and whip for up to 2 minutes on speed 3-4.

I tend to just use the blades. If my butter is hard, I chop it into little pieces, but the 37 degree tip will also work.


Hi Katie,  i blitz my sugar on speed 9 for about 10 secs  then add the butterfly (i think it gives more air) and butter. you can use your 37 degree butten to soften your butter on soft speed for a minute before whipping on speed 4 (no faster when you are using your butterfly) for about 30 secs to a minute. Smile


I'm trying to modify existing recipes to use the TM and was wondering what method do people use when asked to cream butter & sugar in a TM? Do you use the butterfly, or just the blades? Also, what settings do people use to soften butter prior to creaming? Currently I leave butter out on the kitchen bench for a few hours to soften, or if I'm pressed for time, then the microwave.
