Ingredients
- 250 g Dextrose sugar
- 50 g unsalted butter
- 2 tsp vanilla extract
- 2 tsp sea salt
- 0.6 litres cream
- 100 g full cream milk
- 50 g cocoa powder
- 4 eggs

Place dextrose, butter and vanilla in bowl and cook for 30 mins/Varoma/speed 1.
Add salt, cream, milk, cocoa and whisk together for 30 secs/speed 5.
Reduce to speed 4 and introduce eggs one at a time into the hot mixture as the blade rotates.
Cook a further 5 mins/80°C/speed 4.
Pour into shallow container and freeze.
After 2-4 hours when partially frozen, remix for 1 min/speed 4/butterfly to give a creamier consistency.
Pour into cold tin and freeze for up to 12 hours before serving.

Delicious. I was so excited it worked so well! We've been fructose free for a few months in our family and it was so nice to be able to tuck into some scrumptious chocolate icecream that tastes even better than the shop bought stuff anyway. (I left out the salt, used 200g glucose powder and added a teaspoon of bran rice syrup, and used reduced fat milk as we didn't have full cream. Otherwise, all was the same.)
I didn't have any cocoa or sea salt flakes But I made a vanilla version and it's delicious!
