Ingredients

  • 2 lemons, Washed, peel zest off, peef off White Pith and cut in Half.
  • 200-250` g Root ginger, Washed not peeled
  • 110 g white sugar
  • 160 g Rice malt syrup
  • 1500 g Clean Water
  • 1/2 Cup of Liquid Whey, See note at bottom

Recipe's preparation

  1. 1. Put Lemon peel in TM Bowl, MC on and turbo 2 x 2 sec

    2. Add Ginger 3 sec spd 7

    3. Add peeled lemons 3 sec speed 4

    4. Add rest of ingredients - 15mins 100 deg speed 1

    5 Leave to cool to 37 degrees or below and tip into a 2-3 litre glass jar with a loose lid add the whey.

    6. Leave in a warm place, and give the jar a shake every day or so and loosen the lid. It is ready when you get the Fizz - it can take a couple of weeks. The longer you leave it with the fizz the more gingery it will become. the warmer the wether the quicker the ferment  time

    7. Strain through and old teatowel  and decant into bottles to store in the fridge.

    8. Serve  chilled1/2 and 1/2 with soda water

Tip

You are able to leave the dregs in the jar and then do the same as above but with one lemon and arount 50-100g of ginger. It usually ok to do 5-6 batches then I start again. The fermenting time will decrease with each addition.

To get liquid Whey - strain Natural Yoghurt, or Milk Keffir through a cheese cloth - leave in fridge fo 2 hours - the liquid at the bottom is Whey - use the Labne on crackers

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
