Ingredients

DAD's Steak and Mushroom pies

  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 brown onion
  • 1 teaspoon rock salt, ground
  • 4 sprigs parsley
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce, reduced salt
  • 1 heaped tablespoon vegemite
  • 200 grams button mushrooms, sliced
  • 1/4 litres red wine
  • 2 heaped tablespoons Corn Flour
  • 500 grams beef scotch fillet
  • 150 grams unsalted butter
  • 100 grams water
  • 300 grams plain flour
  • 1 egg, beat with fork

Recipe's preparation

    PASTRY
  1. Place butter cut into 2cm cubes into mixing bowl with flour, water and a pinch of salt.

    Mix for 10 sec/speed 6

    Empty mixure onto lightly floured ThermoMat and roll out into a thin sheet.

    Use mini round baking pan as a template to cut out tin lining and pie lids.
  2. PIE FILLING
  3. Preheat oven to 180°C and grease and flour 8 mini round baking pans

    Place parsley in mixing bowl and chop 3 sec/speed 7. Set aside

    Cut onion into quarters and add to mixing bowl with garlic. Chop 3 sec/speed 7. Scrape down sides of bowl.

    Add oil and cook for 4 min/100°C/speed 1

    Add diced beef and all remaining ingredients, cook 10 min/100°C/speed 1 (add additional 20 mins if a cheaper cut of meat is to be used)

    Whilst mixture is cooking, line each pie tin with pastry

    Allow mixture to cool slightly before transfering to pie tins


    Add pie lids and brush with beaten egg

    Bake in oven for 15-20min until golden brown on top.

    Transfer to wire rack to cool slightly before removing from tins and serving.







Tip

Scotch Fillet can be replaced with a cheaper cut of meat by extending cooking time by an extra 20 mins

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
