Ingredients

  • 1 onion large, Peeled and quartered.
  • 2 cloves garlic, Peeled
  • 1 tablespoon EVOO (extra virgin olive oil)
  • 1 cans peeled tomato
  • 1 can tinned peas
  • 1 Large handful fresh basil leaves
  • 2 teaspoons Oregano (fresh)
  • 2 tablespoons TM Veggie Stock
  • 1 teaspoon sugar raw, Or any other sugar you like
  • 480 g water
  • 150 g Greek yoghurt
  • 100 g Tasty or mature cheddar cheese, Grated or previously chopped in TM
  • salt and pepper to taste

Recipe's preparation

  1. 1.  Chop onion and galic cloves, 10 secs, speed 6 until finely chopped.

    2.  Add oil  and cook for 3 mins, Varoma temp, speed 1. Scrape down bowl and cook for further 2 mins.

    3.  Drain tin of peas or use the equivalent of frozen peas.

    4.  Add peeled tomatoes including juice, drained peas, water, Veggie Stock, basil, oregano and sugar.  Cook for 15 mins, temp 90 speed 3.

    5.  Add yoghurt and cheese.  Cook for 2 mins, temp 90' speed 3 to allow cheese to melt and mix through.

    6.  Blend soup, 1 min, speed 6, or longer depending on how smooth you'd like it.  Make sure you turn the speed dial up slowly and do not hold down MC.  Adjust salt and pepper to taste and serve with a sprinkle of chopped parsley, and a sprinkle of extra grated cheese if desired.  

     

Tip

This IS NOT a thick chunky soup, we like ours to be more runny.  It's really delicious and is a good way of hiding peas from little ones as you can't tell it's in there once it's blended.  My little munchkin likes a little cooked small pasta through his.  

If you like it spicy, add some chilli in with the onion and garlic at the beginning of the recipe.

    We really enjoyed this soup.  We added one chilli and used fresh instead of canned tomatoes, and frozen instead of canned peas.  We could taste the oregano and the cheddar in the soup probably more than the other ingredients.  It was very tasty and easy to make and just a bit different to other soups in its flavouring. Thank you for the recipe.
