Nana's Sago Pudding (Tapioca)

  • 100 grams Tapioca
  • 875 grams Milk
  • 1 tsp vanilla essence
  • 75 grams sugar
  • pinches brown sugar
  • pinches salt

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place a bowl onto mixing bowl lid and weigh sago and milk into it. Set aside to soak for 10 minutes.
  2. Insert butterfly whisk. Place sugars, vanilla, salt and sago and milk mix into mixing bowl and cook 15 min/90°C/Counter-clockwise operationspeed 2
  3. Add in egg yolks. cook further 5 min/90°C/Counter-clockwise operationspeed 2
  4. Let stand 2 min, serve with cream or preferred topping. (stewed rhubarb etc)

Tip

Add a cinnamon quill and 1/2 tsp of ground cinnamon to the tapioca-milk mixture to add a hint of spice to the pudding.
