Ingredients

Batter

  • 140 grams oats
  • 65 grams plain flour
  • 90 grams sultanas
  • 20 grams dried apricots
  • Half Overripe Banana
  • Half apple
  • 1 teaspoon cinnamon

Batter ctd

  • 260 grams Milk
  • 1 egg

Recipe's preparation

    Method
  1. Preheat oven to 180 degrees

     

    Line a 20cmx30cm slice tin with baking paper

     

    Add apricots, sultanas and oats to Thermomix - speed 7 for 5 seconds

     

    Add all remaining ingredients - speed 7 for 5 seconds or until ingredients well combined

     

    Pour mixture into a slice tin and bake in oven for 45 minutes

     

    Cool on a wire rack

     

    Cut into fingers or bar size

Tip

Can substitute milk to coconut milk

Use any combination of dried fruit. I've made with dried pineapple, goji berries, dates, etc. Mix it up to give variety however you wish.

Only give to baby when they are taking whole food, or if you are doing baby led weaning. My baby ate these from 7 months.

    How do you store these (out of the freezer)? And how long do they last? Ive put some in the freezer but wanted to keep some out. Wasnt sure if they’d go soft or sticky in an air tight container?

    Great recipe. I've made them a few times for my 16month girl and myself. Freeze really well.

    I use spelt flour, whatever fruit I have in the bowl that needs using up (today was a whole pear and a nectarine) and I also use less sultanas and put in some dried apple. Like you said any combo will do.

    I've also put them (once sliced) in the over at 100 degrees for an hour to dry them out slightly making them a bit more like a chewy rusk - worked well.

    I love this recipe with a cpl of tweaks.. i left out the apricots & added extra sultanas, used a full apple, and added only 100g of the oats plus 40g of sunflower seeds.  I also sprinkled shredded coconut over the top before baking. My 3 year old & 10 mth old both love them.

    My 22 Month old devours these each time i cook them. I used craisins instead of Apricot as all i had in the house and too scared to change now tmrc_emoticons.)
