Recipe's preparation

  1. Place dates into mixing bowl and chop 10 sec/speed 7. Scrape down sides of bowl.

  2. Add remaining ingredients and mix 15 sec/speed 7. Scrape down sides and repeat mixing.

  3. Roll mixture into small balls (approximately 1cm). Place rolled balls in a large shallow bowl (or container) filled with extra desiccated coconut. Lightly toss the balls to coat them in coconut.

Tip

Raw cacao is similar to regular cocoa except that it’s less processed and hasn’t been heated to high temperatures, so it retains more nutrients including vitamin C, iron, fibre, polyphenols and other antioxidants. Like cocoa, it does contain a little caffeine so it should be had in moderation.

If you would prefer, you can replace the raw cacao with carob powder.

Tip: It’s important to use fresh dates, rather than dried which tend to make the mixture crumbly and difficult to roll.

Tip: For a slightly sweeter version, add a little sweetener of your choice (such as brown sugar, rapadura sugar, maple syrup or stevia) to taste.

My daughter didn't like these, so I added some raw brown sugar and then they became her favourite. Easy recipe, just make sure the dates are PITTED ie. ensure the stones are removed from the dates.

Absolutely amazing!! Everyone loved them even my husband who hates dates (but doesn't know that's what's in them). i also used dried dates (which were not too dry to start with) soaked in water for 2 hours and the texture was perfect.  I rolled the mixture into a log whilst wrapped in glad wrap, sprinkled coconut and cut into discs after Refrigerating. Next time I'll make an adult version with a dash of rum as they reminded me of rum balls.

These are great, I didnt have fresh dates so I soaked dried dates for a few hours and they were still delicious...and super easy.
