Ingredients
- 400 g pumpkin, peeled seeded and chopped
- 400 g parsnip, peeled and chopped
- 500 g water
- 30 g Butter
- 1 carrot, chopped
- 2 Zucchini (courgettes), chopped
- 1 Brown onion, quartered
- 2 garlic cloves
- 1 tbsp olive oil, plus extra for drizzling
- 500 g minced lamb
- 2 tbsp tomato paste
- 1 x 400g tin chopped tomatoes
- 20 g parsley, chopped
- 50 g cheddar, grated

Preheat the oven to 180°C.
Place the pumpkin and parsnip into the Varoma dish. Place the water into the mixing bowl. Place the Varoma into position. Steam the vegetables 20 min/Varoma/speed 2 or until tender (larger pieces of vegetables may require a longer cooking time). Discard the cooking water.
Insert the butterfly whisk. Place the steamed vegetables into the mixing bowl with the butter and mash 25 sec/speed 4 or until smooth. Transfer to a bowl and refrigerate until needed. Clean and dry mixing bowl.
Place the carrot, zucchini, onion and garlic into the mixing bowl and chop 4 sec/speed 5. Scrape down the sides of the mixing bowl with the spatula. Add the olive oil and lamb mince, stir through with the spatula and cook 5 min/Varoma/"Counter-clockwise operation" /speed 1. Stir again with the spatula to break up any lumps of mince.
Add the tomato paste and tomatoes and cook 5 min/Varoma/"Counter-clockwise operation" /speed 1. Add the parsley and stir through with the spatula. Spoon the lamb mixture into a 2 litre ovenproof dish (or use 2 dishes or 6 smaller ramekins).
Top the lamb mixture with the reserved pumpkin and parsnip mixture. Sprinkle over the cheese and drizzle over a little oil. Bake in the oven for 25 minutes, or until the top is lightly browned.
Tip
As a general rule, the recipes in my book don’t include salt and pepper. Added salt is bad news for younger children, their less mature kidneys can’t cope. After setting aside your child’s serving, by all means please season your portion to taste.
We recommend using courgettes which are smaller than standard zucchinis.
We also recommend using a mince with a higher fat content, as lean mimce can sometime have water added to it, which comes out in the cooking process.
Baby's serve: For a younger baby, blend together the shepherd's pie filling and topping, adding as much liquid (water or your baby's milk) as needed to achieve the desired consistency. For an older baby, chop up to a consistency that can be easily eaten with a spoon.
Toddler's serve: Prepare as for an older baby or simply serve as is.

This was delicious. I used two zucchinis because we are growing them in teh back yard and I have a lot to use up. Yes it made the dish slightly runny but not to the point that it was ruined. I made a vegan version, so plant based mince, nuttelex etc and also added a Massel 7 stock cube as other comments said it could do with some seasoning. I went back for seconds. Overall very happy and will definitely make this again.
Something classic as for me
I made this last night but I added a teaspoon of salt and pepper 2 tablespoons of tamari and 400 grams of fresh truss tomatoes instead of tin (I chopped them before starting recipe) it was amazing.. yes it was a little watery but I just spooned the water out.. I think I will put a little arrowroot in it next time...

So disappointed!
I should start by saying I love Louise Fulton Keats recipes and have three of her books. I find her recipes are usually reliable and that's why I thought I'd give this Shepherd's Pie a go. I am familiar with her not adding salt and as my kids are older I added seasoning. I thought the flavour of this dish was nice. However, I had the same issue as a lot of people in these comments. So watery! And my mince cooked to a mush. I know that eastern states zuchinin's are smaller than ours here in the west so I only added one but I think a half would have been sufficient. Maybe less. I also don't know how you can ever cook mince in a thermomix and not have it turn to mush. Family was not impressed with tonights dinner.

My dinner is nothing like the picture, its realy Yuck
Wished I had read comments before making! Just put it in the oven, very watery!!! Also should cut up cheese before proceeding with recipe. Had to get my grater out at the end. Took forever to make, so unless it taste awesome will not be making again. This is the first recipe I have tried out of her book, hopefully they aren't all like this.

I cooked the lamb and veges for 10 minutes (step 4) and then in step 5 I cooked for 20 minutes, and I did not have any problems with the mix being too 'watery' as mentioned in other comments.
I used sweet potato instead of pumpkin.
I found it quite watery aswell.. but after cooking it for another 30 mins in the thermomix, it helped thicken the sauce. But overall, it lacked a bit of depth In flavour. Was going to buy the cook book as I heard great reviews about it but not sure now. I have to say, my baby loved it though!
This recipe comes highly recommended, Cant wait to try it!!
