Ingredients

Apricot and coconut balls

  • 50 g almonds
  • 200 g dried apricots
  • 1 tbsp freshly squeezed orange juice
  • 2 tbsp water
  • 70 g dessicated coconut, plus extra for rolling
  • 3 tbsp wheatgerm, as needed to bind
  • 1-2 tbsp Maple syrup

Recipe's preparation

    Apricot and coconut balls
  1. Place almonds into mixing bowl and mill 20 sec/speed 9.

  2. Add apricots and chop 10 sec/speed 8. Scrape down sides of bowl.

  3. Add orange juice and water and mix 5 sec/speed 2.Allow to soak for 1 minute.

  4. Add coconut, wheatgerm and maple syrup and mix 25 sec/speed 7 or until well combined. Roll mixture into small balls and then roll in extra coconut.

Tip

Variation: To increase your toddler’s dietary variety, you might like to replace half of the apricots with dried figs. Like apricots, figs are a good source of iron.

    I switched water and OJ for Kefir and I switched wheatgerm for Flaxseed.
    Rolled the balls in Akta vite too add a little more nutrition and a hint of chocolate flavour.
    Hope the kids enjoy

    My, oh, my!  These are Ah-mazing!  Used half apricots, half figs and weetbix as per tips and other comments. My 8 month old, 2 year old and husband love them. I had to make a second batch straight away!!

    So good, used weetbix insteadof wheat germ and did half sunflower seeds and half almonds. Kids love them (and I'm struggling not to demolish them too!)

    Love them! Maded a nut and gluten free version by replacing almonds with pepitas and eliminating wheatgerm. Were still yummy tmrc_emoticons.)
