Ingredients
- 1 zucchini, chopped into 2in pieces
- 110 grams Tasty cheese, roughly chopped
- 4 to 6 rashers shortcut bacon, roughly sliced
- 1/2 onion brown, halved
- 4 Eggs.
- 80 grams SR flour
- 270 grams Milk
- 5 cherry tomatoes, halved

1. Preheat oven to 180 degrees celsius - 160 for fan forced.
2. Place zucchini, cheese, bacon and onion into TMX bowl and chop speed 5/5secs/MC on.
3. Scrape sides down and add eggs all at once and mix 10secs/speed 3/reverse/MC on.
4. Add SR Flour and the milk to the bowl, mix together for 30sec/speed 3/reverse/MC on.
5. Pour into a greased quiche dish. Place halved cherry tomatoes neatly around the outer edge spaced a couple of inches apart (so you get one cherry tomato to each slice of quiche). Cook for 35-40mins.
Tip
This can be frozen and reheated. I slice mine up into pie slices and freeze individually for a quick lunch.

This pie is a winner!
I made it for dinner tonight and the only thing I added to it was 2 handfuls of spinach. DELICIOUS. It went a lovely golden brown on top and stayed very moist.
I served it warm, with salad.
A must do once a week for sure.

Quick and easy. I also made mine vegetarian so added 140g raw pumpkin (cos that's all I had!) instead of bacon. Plus a tsp of Himalayan salt.
The only grumble I have is not specifying the weight of the zucchini. One could mean anything because they come in such various sizes. The amount used will determine how much milk is needed. I used 200g of zucchini which was probably a little under. Will try 250g next time.
A very nice and easy to make quiche, I had to make it vegetarian and put in asparagus instead of bacon, it worked a treat.
I've already made this pie today! So delicious and easy to freeze for kids lunches next week. This wil be a favourite in our house for sure.
