Ultimate Gluten Free Artisan Bread by The Loopy Whisk

  • 8 g dried instant yeast, (or 2 1/2 tsp)
  • 20 g sugar
  • 390 g warm water, (divided)
  • 20 g Psyllium husk, (not powdered)
  • 130 g buckwheat flour
  • 100 g potato starch, (or tapioca flour)
  • 90 g brown rice flour
  • 2 tsp sea salt, (or 10g)
  • 2 tsp apple cider vinegar, (or 12g)

Recipe's preparation

    Bread Dough

    Preheat oven to 220 degrees.



    In a small bowl, mix together the yeast, sugar and 150 g (1/2 cup + 2 tbsp) warm water. Set aside for 10 – 15 minutes, or until the mixture starts frothing.



    In a separate bowl, mix together the psyllium husk and 240 g (1 cup) water. After about 15 – 30 seconds, a gel will form.



    Add the buckwheat flour, potato starch, brown rice flour, salt, yeast mixture, psyllium gel and apple cider vinegar to the TM bowl. Knead the dough 7min/Dough mode"Dough mode"



    Transfer the bread to a lightly oiled bowl and cover with damp tea towel. Let the dough rise for approximately 30-60 mins, until doubled in size.



    Turn out into baking dish or loaf pan and bake for 30 mins.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
