Ingredients
Pizza Doughts
- 1 teaspoon brown sugar
- 2 tablespoons dried yeast (or 1 sachet)
- 375 grams warm water
- 699 grams bakers flour
- 60 grams extra virgin olive oil
- 1 pinch sea salt flakes
White Sauce
- 2 tablespoon extra virgin olive oil
- 1 brown onion
- 2 clove garlic
- 1/4 cup thickened cream
- 1/2 teaspoon fresh thyme leaves
- Salt and Freshly Ground Black Pepper
Topping
- 250 grams ricotta cheese
- 1 pinch sea salt flakes
- 1/4 teaspoon fresh thyme leaves
- coarsely ground black pepper

Place dried yeast, brown sugar and water in the Thermomix bowl. Mix for 20 sec/ speed 2 "Counter-clockwise operation" / MC on.
Add the bakers flour, olive oil and salt and mix 10 sec/ speed 2 "Counter-clockwise operation" / MC on.
Knead dough for 3 min/ "Dough mode" / MC on.
Transfer to Thermomat and place in a warm place to prove until doubled in size (generally half an hour to an hour)
Roll out onto oiled pizza tray, poke holes in dough with a fork and set aside.
Whilst your pizza dough is proving, make your white sauce.
Place onion and garlic into Thermomix bowl. Chop 3-5 sec on speed 5. Scrape down sides of bowl with spatula then set to cook 5 mins at 100 degrees on speed 1
Add the cream then set to cook 3 mins at 50 degrees "Gentle stir setting"
Stir in Thyme, add Salt and pepper to taste.
Preheat oven to 220 degrees C
Roll out dough onto oiled pizza tray. Poke holes in the top of dough with a fork and set aside.
In a bowl add ricotta, salt, peppet and thyme with. Mix your hands until fully combined.
Spread white sauce over base then dollop ricotta mixture on top. Place in oven for 15-20 minutes until crispy.

Depending on thickness of pizza base you could stretch this out to make 2 pizzas.

SOOOOOOO YUMMY!!!!! Had some Turkish Pizza Bases to use up so whipped up this white sauce and topped it with leftover diced bacon and cheese. Hubby declared it the best pizza I ever made. Will be my go-to pizza sauce from now on. Nice change from tomato sauce.
