- 30 g olive oil
- 220 g lukewarm water
- 1 tsp sugar
- 7 g dried yeast
- 400 g baker's flour
- 1 tsp salt

- Pepperoni, sliced
- Cherry Tomotoes

- tomato paste

Pizza cake is perfect for those who have only a small sweet tooth, or those who want an excuse to eat pizza more often. As the base is so thick, it must be pre-baked to ensure the dough cooks all the way through. Toppings are suggestions based on a classic American style pepperoni pizza; feel free to mix and match your own!
Method:
1. Prepare one quantity pizza dough, as in Basic/Everyday Cookbook.
2. Allow dough to rise until it doubles in size.
3. Pre-heat oven to 180 degrees C.
4. Grease a 20cm springform cake tin.
5. Flatten dough into a disc and place it in the tin. Press the dough into the sides of the tin.
6. Bake dough for approximately 15 minutes.
7. Allow part-cooked dough to cool slightly before pressing the centre of the dough down. Try to form an almost tart or pie case shape.
8. Spoon two tablespoons of tomato paste into the base and spread it evenly over the dough.
9. Layer pepperoni, tomato, basil, and cheese. Repeat until the toppings reach the height of the dough case.
10. Bake for a further 20 minutes, or until the dough has cooked all the way through.
11. Allow to sit for a moment before transferring to a serving tray.
