Ingredients

Filling

  • 2 zucchini, Chopped in 3cm pieces
  • 160 grams Baby Spinach Leaves
  • 200 grams shredded chicken
  • 60 grams Sun-Dried Tomato Strips, Drained
  • 60 grams Tasty cheese, Grated

Dough

  • 370 grams self-raising flour
  • 60 grams Butter - cold, 1cm cubes
  • 250 grams Milk

Cheese topping

  • 40 grams Tasty cheese, Grated
  • 30 grams parmesan, Grated

Recipe's preparation

    Filling
  1. 1.  Preheat oven to 200 degrees Celcius. (Fan-forced).

    2.  Add zucchini to the bowl and grate.  3 secs/Sp 6.  Set aside.

    3.  Add spinach to the bowl and shred.  5 secs/Sp 5.

    4.  Add remaining filling ingredients and reserved zucchini to the bowl.

    5.  Mix on Counter-clockwise operation"Counter-clockwise operation"  5 secs/Sp 4.  Set aside.

    6.  Wash & dry bowl to prepare dough.

  3. 1.  Add self-raising flour to the bowl.

    2.  Add butter to the bowl.

    3.  Mix 1 min/40C/Sp 4.

    4.  Add milk to the bowl, mix 6 secs/Sp 6.

    5.  Knead for 2 mins/Dough mode"Dough mode" .

    6.  Place dough on ThermoMat or similar and roll out to a 30cm x 40cm rectangle.

  4. Scrolls
  5. 1.  Spread the reserved filling mixture onto the rolled out dough, leaving a 2cm border.

    2.  From short side, roll up tightly to form a log.  Trim ends.

    3.  Cut into equal slices, should make 10 scrolls.

    4.  Brush pastry with extra milk and top with cheese topping.

    5.  Place in a lined baking pan and bake for 30 mins (or until golden).  Stand in pan for 5 mins.  Serve.

Dough can also be prepared first, and sat aside whilst filling is being made.

For vegetarian, replace shredded chicken with 150gms grated pumpkin or sweet potato.

    Very adaptable and easy recipe. Delicious although I changed the recipe quite a bit. I used half the amount of spinach and one large zucchini and was still a very wet mix. I put all of the cheese into the mix instead of topping them with it and used ham instead of chicken. I just used frozen puff pastry (lazy me) and spread pizza sauce on before the mix. Great idea for the lunch box/ afternoon tea.

    Agreed, the moisture content does vary greatly with the size and moisture of the zucchini.

    Great recipe very easy and you could omit and add as you wanted tmrc_emoticons.) a little less filling would be good  Thanks for sharing

    These tasted yummy but next time I will only use one zucchini as there was way too much filling and it was too wet and sloppy. I cooked them for an extra 15 mins.
